These easy steamed fish parcels with Japanese seasoning are an ideal way to get kids in the kitchen. They are a favourite meal for busy families because they are easy, quick and almost impossible to overcook. The bonus is zero clean up when you serve them in a paper parcel. The best and easiest way to make salmon is in foil. You can be as creative as you like with the ingredients or follow along with my recipe below. They are perfect to serve on their own or simply with steam jasmine rice or noodle salad to make into a meal.

Asian Style Salmon Parcels
Serves 8
Ingredients

800g Salmon skin off

3 fresh kaffir lime leaves thinly sliced

10g ginger julienne

10g garlic julienne

10g chilli sliced

1 cup fresh fennel sliced

½ cup onion sliced

1 lemon sliced

Salt
-
Pepper
-
2tbsp cooking oil

1tbsp sesame oil
Method
- Pre heat the oven to 180c.
- For parcel- spread the big sheet of silver foil and the baking paper on top.
- Mix all vegetables together except lemon.
- Spread a little oil on the baking paper and then spread 1/3 of the vegetable mix on baking paper and then place salmon on top.
- Sprinkle salmon with the following ingredients in this order: salt, pepper, sesame oil and then with remaining vegetable mix and finally with lemon slice.
- Sprinkle a little more oil on.
- Roll the parcel- first roll the baking paper around salmon then wrap it in silver foil.
- Put it on baking tray and cook for 40 minutes or until internal temperature is 55c.
- Rest the salmon in parcel for another 10 minutes before serving.
